This 5.5-inch boning knife features a long, thin, flexible blade for precision trimming when separating meat from bones and joints. ZWILLING Pro boasts a unique curved bolster that acts as an extension of the hand, supporting the professional pinch grip, with thumb and index finger on the blade, for safe cutting and less fatigue. The blade was designed with a broad curve in the front to facilitate the rocking motion of Western cutting, while the straight back is ideal for the chopping motion Japanese knives were designed for. The full length of the blade can be used when cutting and can be sharpened from bolster to tip.

Flexible Boning Knife

This is a great knife, very sharp. It’s nice to finally get good knives. We have bought other brands and after a few years we have thrown them out.

Beginner's review

This is my first "professional" knife I've ever purchased and used in my own time. It has been extremely clean cutting through the NY Strips and Sirloins I've been doing at home. Perfect for buying in bulk somewhere and cutting it up and trimming yourself. Knife is also extremely comfortable in either hand which is a huge plus since I'm ambidextrous and switch sometimes.
